The Last of us CHÂTEAU D'ESCLANS Price : CHF40.95
Harvested during the cool morning hours. Sorting the grapes three times guarantees only perfect, ripe and healthy berries. The grapes are then pressed at a cool 7 - 8 degrees to avoid oxidation. In the Château d'Esclans, only free-running plus the juice from the first pressing is used in order to obtain the highest quality without any tannin or green notes. This juice is then fermented in 600 liter Demi-Muid barrels made of French oak and steel tanks in a temperature-controlled manner.
The grapes for the 2017 Beerenauslese come from various terraced vineyards throughout the Wachau. The focus is on the elegant and precise character of Wachau quality wines. Selected Wachau sites were specially cultivated for sweet wines and the vineyards were protected from bird damage with nets. Riesling in particular was perfect for high-quality Botrytis grapes. A corresponding proportion of healthy grape material is also decisive in order to maintain fruit and precision. It was harvested by hand between mid-October and mid-November. The average yield was only 1,500 kg / ha. The controlled fermentation and the expansion in stainless steel tanks give elegance and structure. Vegan certified.

The 2015 Trockenbeerenauslese No 11 Welschriesling Zwischen den Seen, which has matured in stainless steel for 18 months, is precise and spicy on the concentrated but extremely fine and even subtle nose. Rich and noble sweet on the palate, this is a luscious and highly elegant as well as fine Welschriesling with really fine tannins and a nice freshness. The acidity is vital but integrated, and the wine has a remarkable balance, even though the residual sugar is 313 grams per liter. Intoxicating!
